Second, it had a tremendous list of recipes. Finally, every recipe was easy to cook. Well all but one. That one is called, "New Orleans Style Chicken Noodle Soup". What it lacks in ease it makes up for in taste! Well, your family may be prepared to wait until you get back home provided you can eat immediately. This is where a slow cooking brisket enters the picture. Once you get back, you will find everything ready on the table and you just have to take a quick wash and start eating. For my guests as they arrive I will be making Mulled Wine with a sweet, light red wine beef brisket injection mulling spices. In it I will float an orange or two punctured with whole cloves, and a few cinnamon sticks. At the first sips the wine tasted of lemon. It had moderate acidity and was fairly short. Its first pairing was with slow cooking beef ribs accompanied by sliced potatoes and a tomato, onion, lime, cilantro and green pepper salsa that was more spicy than I would have preferred. The acidity was fine for the meat and potatoes and there was a little bit of lemon. The wine and the meal didn't really gel - I don't blame the wine for not succeeding in a non-traditional pairing. Dessert was orange-flavored fruit candy; things worked better. The dominant taste was almonds and there was some honey as well. At the first sips this wine was too sweet but quite long and fruity. It offered some darkness accompanied by balanced acidity and tannins. Japanese rice crackers with Wasabi invited dark, dark cherries to join the mix. If only that non-endearing sweetness would go away. In the presence of slow cooked chicken meatballs swimming in a tomato sauce the purple liquid showed great balanced and its sugar level was down. The accompanying potatoes made our Australian friend good and dark but it was excessively sweet. A medley of mixed beans and chickpeas made me note the drink's darkness, length, and, alas, the high sugar content. Fruit juice candy made a great match of dark cherries and oak in my glass. The final meal main dish was a spicy barbecued chicken breast. Now this wine was powerful and round. It was dark with balanced tannins and acidity and it was fruity. Potato salad with carrots, peas, and pickles rendered the liquid dark and long with some plums. Zesty guacamole brought out a burnt taste and good acidity in the Cab. Dessert consisted of fresh blueberries. In response the wine was almost sour, not a good combo. But it was long with pleasant tannins.
